Comforting

Although Kuala Lumpur isn’t experiencing the change of season I am accustomed to back home, my body is telling me I need to get ready for the colder weather!  Call it instinctual, but growing up on the east coast of the U.S., it’s my body’s reaction to start turning on the heat in the house, snuggling up in my favorite sweatshirt and making comfort food during this time of year.  We may not have the option of turning on the heat in our house, (although my husband keeps saying he can blast the A/C if I want it to feel like winter), but I can always snuggle in my favorite sweatshirt and make comfort food!  So this is just what I did this evening here in KL (it’s Tuesday evening here already – ha!).  See below for the recipe and pictures of the comfort food we enjoyed tonight…quick, simple, delicious!

casserole

Chicken Casserole

– sliced chicken breast
– egg noodles (I couldn’t find here in Malaysia, so I used fettuccine)
– 2 cans of Cream of Chicken condensed soup

(You can add a can of peas, veggies, whatever you want to this recipe.  Mine is very simple.)

Place a whole chicken in a pot of water on the stove until it comes to a rapid boil and the meat is tender to touch with a fork.  Take the chicken off the stove and place cooked chicken in a strainer, pulling off the skin.  Slice off the pieces of chicken you would like in your casserole.
Boil the pasta and drain.  Combine the cooked pasta, cooked chicken and two cans of Cream of Chicken soup into a casserole dish.  Cover the mixed pasta, chicken and Cream of Chicken with potato chips for a fun bit of texture and added salty taste.  Cover the entire dish in tin foil, cut a couple slits in the top.  Bake in the oven for 30 minutes on 350 degrees Fahrenheit.  Enjoy!

    I have not tried a casserole, but I have been putting the crock pot to work. Nothing like a hearty meal when it gets chilly and you have lots of leftovers! I want to see a pic of your Halloween tree!
